Since 2005, the average difference between the CME block cheese and butter markets has been a cheese premium of $.14. However, as of late its been the butter market that has been carrying the premium which is currently at its largest level in nearly five years.

I often remind clients that these supply changes are likely something we will only experience once or twice in our careers. In a normal economic environment, this would be very bullish for protein prices. But obviously we are not in a normal economic environment.
